A Storied Culinary Journey

With over 30 years of experience, Chef Hervé has made his mark across Europe and Asia. His expertise has been honed through prestigious roles, including overseeing the Chefs Club in New York, Aspen, and Taipei. His skills have graced Michelin-starred restaurants, and he has had the honour of cooking for distinguished personalities like Queen Elizabeth II and President François Mitterrand. Chef Hervé is passionate about using food as a vehicle for cultural exchange.

His dedication to the culinary arts extends beyond the kitchen. In 2015, Chef Hervé was appointed as an honorary consultant for the Royal Project Foundation by Queen Sirikit of Thailand. This role showcases his commitment to sustainability and local produce, reflecting his efforts to source fresh ingredients from local farmers, a philosophy that aligns perfectly with Brasserie 9’s ethos.

A Master At Work

Step into Brasserie 9, and you're transported to a Parisian bistro, complete with vintage charm and a touch of tropical chic. It’s the perfect setting for Chef Hervé’s masterpieces. Forget boring old menus; here, each dish is a story waiting to be told. From the moment you sink your teeth into the Foie Gras Millefeuille, the delicate flavours will leave you speechless, and you know you're in for a treat.

Fancy something a bit more classic? The Six Burgundy Snails, bathed in a garlicky, buttery sauce, is a French staple with a seriously addictive quality. Seafood lovers won’t be disappointed either. The Spanish Octopus Leg Barbecue is a bold and beautiful dish that perfectly balances smoky, chargrilled flavours with the creamy richness of rice espuma. And for meat connoisseurs, the Anjou Pigeon is a must-try. Think tender, juicy meat complemented by the sweetness of braised endive and a rich red wine beetroot jus.

A Taste of France, A Touch of Thailand

What sets Chef Hervé apart is his ability to bridge the gap in fine dining between French tradition and Thai innovation. He's not afraid to experiment, push boundaries, and create dishes that are both familiar and exciting. This fearless approach is what makes Brasserie 9 such a special place.

So, if you're ready to go on a culinary adventure that will leave you wanting more, visit us at Brasserie 9. With Chef Hervé at the helm, you're guaranteed an unforgettable French fine dining experience in Thailand.
